Every ingredient has a job.
Everything is organic. This is how we see the role of each ingredient.
Cashew butter
The base. Gives the filling its creaminess and most of its fat.
Oats
Give the bar body and a full, grainy taste.
Fibre
Gives structure and most of the fibre. We are still testing tapioca and chicory root.
Blueberry and dark chocolate
The flavour and the sweetness. Freeze-dried berry pieces, chocolate with 70 to 75% cocoa.
Chamomile, lemon balm and valerian
The herbs from your evening tea, as extracts.
Glycerol and sunflower lecithin
Glycerol keeps the bar soft, lecithin holds the mix together. Plus a pinch of salt.

- Summer 2026The direction. Not a protein bar, but a bar of kitchen ingredients, with no sweeteners.
- ThenVersions. The recipe grows in versions, with feedback from dietitians and other professionals.
- 23 September 2026The tasting. We tasted the version now on the site: 5.1 g sugar and 8.2 g fibre per bar.
- NowChoosing the fibre. Tapioca or chicory root. Stickier with tapioca, fresher with chicory.
- ThenLab and certification. Nutrition measured in a lab, intended organic certification by Skal Biocontrole.
- Winter 2026/27Batch 1. 1000 bars, delivered to the founders first.
This is a first batch. Here's what could go wrong.
- The recipe is set, except for one ingredient.We are still choosing the fibre. Until certification is complete, some numbers are calculated and marked as such. Nothing is presented as fact before it is one.
- Dates can slip.Food production and organic certification depend on parties outside our control. If the timeline moves, you hear it from us first, with the new date and the reason, not silence.
- And if it fails?If Batch 1 can't ship, every reservation is refunded in full, automatically. Your maximum risk in this whole deal: €0 after the refund.
UNCHAIND Batch 1 is a developmental product. Statements about organic status and composition refer to the intended final recipe and are confirmed and certified before delivery (intended organic certifier: Skal Biocontrole). Your reservation is fully refundable until delivery.

UNCHAIND started with a simple frustration: finding a bar that fits clean eating and a full life, without feeling like a compromise. It didn't exist. So I'm building it.
What I recognise in the Netherlands: level-headedness, and honesty over big talk. That's exactly how I want to build this: in the open, with every decision explained, including the price.
